Low Syn Cupcakes

Journalling reads: Standard size cupcakes - makes 24 - approx 1/2 syn each. Mini size cupcakes - makes 48 - Approx 1/4 syn each. Ingredients: 56g self raising flour or 28g self raising flour and 28g cocoa powder, 9 tablespoons of sweetener,
6 eggs, 2 teaspoons of orange, lemon or vanilla essence.

Method: Gather ingredients. Seperate eggs then whisk up egg whites until stiff. In a seperate bowl whisk egg yolks with essence of choice and sweetener. Add 1/4 of the egg white and beat until mixture is a pale yellow. Add the flour gradually and fold into the mixture. Then add the rest of the egg whites and fold in. Divide mixture equally into a cupcake tin. Bake in oven on 180 degrees or gas mark 4/5 for 10/12 minutes oe until golden and firm to the touch.
